I use Ubuntu with Webmin + Lamp and manage everything via Winscp, I don't use the desktop and I'm fine with it.

Been using Mint as my linux of choice for like 12 years or so. Wouldn't go back to stock ubuntu for a desktop even if you paid me! (I do use ubuntu on my vps -mostly bc laziness)

I had the same problem with Ubuntu and MySQL. I switched to Linux Mint and XAMPP for databases, and now everything works.
